I love soup in winter. It is so comforting and warming. Here is my homemade butternut squash soup!
It feeds 4 and is 160 calories.
Ingredients
Olive oil
2 decent sprigs of rosemary, remove from stalk and chop finely
3 garlic cloves, pressed
1 red chilli, deseeded and chopped
1 butternut squash, deseeded and chopped in to small cubes
800 ml of stock (usually 2 cubes)
Salt & Pepper to season
Method
Fry the garlic, chilli and rosemary on a medium heat for two minutes.
Add in the butternut squash and stock. Simmer gently for 20 minutes.
When the butternut squash has softened, remove from the heat and mash with a potato masher to your desired consistency. Alternatively you can put it in a blender to create a smooth soup.
