My housemate insists that this is not carbonara. I agree. What this is, however is a great tasting alternative if you don’t like cream and cheese!
It’s quick, easy and super tasty!
Serves 2
Ingredients
160g dry Spaghetti (I do 80g per person)
2 eggs
4 rashers of bacon
Salt and pepper to season
Method
Cook spaghetti as per packet instructions.
Meanwhile fry the bacon in a little olive oil
Crack two eggs and whisk
When cooked, drain the spaghetti and return the pan to the hob. On a medium heat, pour the egg mix over the spaghetti and mix well with a fork until the egg is cooked.
Transfer the egg/spaghetti mix into a bowl, season with salt and pepper and sprinkle cooked bacon over.
Serve with garlic bread and a LARGE glass of wine!
