I love aniseed, and so fennel is one of my favourite herbs. I adapted this a little from a Good Food recipe I saw today, using things in my store cupboard. Most of the pasta I cook is quick, easy and mostly boring. This was anything but boring! It was ready in around 30 minutes.
Serves 2
Ingredients
1 fennel bulb
1 onion
200g chopped tomatoes
2 tbsp tomato purée
6 rashers of streaky bacon
1 deseeded chilli
Thumb sized piece of ginger
3 garlic cloves
6 chestnut mushrooms
Small handful of parsley
Method
Fry the onion and fennel in a little olive oil on a low heat until soft
Add in the chilli, ginger, garlic, bacon, tomatoes and purée and fry for 15 minutes
Add the mushrooms and fry until soft. Meanwhile cook your chosen pasta.
Add the pasta and a ladle of pasta water.
Stir it all together and add parsley before serving
