I’ve been struggling to control my sweet tooth throughout January. As well as doing Veganuary I’ve also tried to cut out chocolate, sweets and crisps. I figure that January is the most depressing month of the year, why not make it as bad as humanly possible haha.
These cookies are sweet, chewy and crumbly all at once. Disclaimer, they can fall apart a bit so make them smaller rather than bigger!
Makes 10 small cookies, 133 calories each
Ingredients
100g oats
Handful of blueberries
2 tbsp coconut oil
4 tbsp peanut butter
2tbsp maple syrup
Method
Preheat the oven to 180°c and line a baking tray with baking parchment.
Melt the coconut butter in the microwave in a large bowl.
Add in the maple syrup and peanut butter and stir.
Add in the oats and a pinch of salt, add the blueberries and stir until a big gloopy mess.
Dollop the mixture evenly onto a baking tray, leaving an inch around each for spreading.
Cook in the centre of the oven for 10 minutes. Cool on a wire rack before devouring.
These look great. I will have to try these to help with my sweet tooth as well.
