Roasted Vegetables and Herb Chicken – Recipe

I’ve mentioned many a time how much I love quick dinners, the occasional packet mix, and tasty food.

Today I managed all 3 with a little help from my friend… Maggi. The ‘so tender’ range of packet mixes are ideal if you like succulent, flavoursome chicken but don’t always have time to prepare a meal. They contain the perfect blend of herbs and spices to infuse your chicken with lots of flavour. The paper keeps the chicken tender whilst it cooks, so there’s no need to add oil.

Even better, it’s only 437 calories per serving.

Serves 4

Ingredients

For the roasted veg


1 butternut squash, peeled and cubed

2 sweet potatos, peeled and cubed

1 sweet red pepper, de-seeded and chopped

2 carrots, peeled and chopped

2 parsnips, peeled and quartered

1 sprig rosemary

2 Tbsp olive oil

Salt and pepper

For the dressing


I juice of 1 lime

Handful parsley

Dash of white wine

2 tbsp olive oil

For the chicken


4 chicken breasts

1 packet Maggi, so tender, Italian herbs chicken

Method


Peel and chop all the vegetables. Put in an oven proof dish. Drizzle Olive Oil over and sprinkle salt and pepper to taste. Put in a preheated oven on at 180° C for 25 minutes.


Open packet of Maggi Italian herbs chicken and wrap a piece of the pre-herbed paper around each chicken breast. Place in a hot frying pan and fry for 6-7 minutes of each side until chicken is cooked through.

Meanwhile, mix lime juice, parsley, white wine and olive oil together to make the dressing.


When the roasted veg is cooked, plate up with the chicken, drizzle a little dressing over, and simply eat!
