I love quick weekday dinners. Here is a great tasty, healthy recipe that will keep the cold nights at bay and give you more time to catch up on the TV you love!
Ingredients
3 tbsp Soy sauce
3 tbsp honey
Juice of half a lemon
2 or 3 garlic cloves
Thumb sized piece of ginger
For the stir fry
4 chicken breasts
2 peppers thinly sliced
1 carrot thinly sliced
1 red onion thinly sliced
Bean sprouts
Straight to wok noodles
Method
Mix the garlic, ginger, lime juice, honey and soy sauce together in a bowl. Add chicken pieces and marinate for as long as possible (minimum 10 minutes)
On a medium heat, fry the marinated chicken in all the juices for 10 minutes until cooked through.
Meanwhile…
Chop the peppers, carrot and onion and add to a wok or large pan on a medium heat until soft. Add in the bean sprouts and noodles and cook as per packet instructions.
Mix all together when cooked, pop on a plate and serve with a slice of lime.
Devour in front of your favourite tv program!
