This is a quick easy recipe that contains mainly ingredients you would find in your fridge or pantry. It’s totally veggie and vegan. It’s full of taste, pretty healthy and ready in around 40 minutes.
Makes 4 stuffed peppers*
Ingredients
4 peppers (I love red and yellow personally)
1 onion finely chopped
2-3 garlic cloves
85g dry stuffing mix
125g long grain rice
125g mushrooms chopped
450ml boiling water
Method
Preheat oven to 180 degrees
Chop the onion and garlic and fry in a little olive oil until soft
Add in the water, chopped mushrooms and rice and simmer for 20 minutes
Cut the top off the peppers and de-seed. Boil in a pan of water for 5 minutes
Stir stuffing mix into mushroom/rice combo after the 20 minutes and mix
Spoon stuffing mix into the hollow of the peppers (I find placing them in a muffin tin keeps them upright!)
Replace lid and bake in the oven for 20 minutes
*I usually eat two for dinner, unless I make something else with it, then I will have the one (I’m not a total piggy!)
